Pour the remaining 1/4 cup whipping cream into a metal measuring cup and sprinkle in the gelatin. Let the gelatin "bloom" for 10 minutes; you'll see it soften and swell.

Gently heat the measuring cup by swirling it over a low gas flame or a candle, just until the gelatin completely dissolves and the liquid is clear. Be careful not to boil it, as high heat can damage the gelatin's setting power. Stir this warm mixture into the cooled chocolate and set it aside.

In your chilled mixing bowl, beat the cream until it forms medium peaks – it should hold its shape but still be soft and billowy. Take about 1/4 of the whipped cream and stir it into the chocolate mixture to lighten it, making the chocolate easier to fold without deflating the cream.

Gently fold in the remaining whipped cream in two additions. Don't worry if you see a few streaks of white; that's fine. The key is to avoid overworking the mousse, which can deflate its airy texture.
