Brownie Coffins

   Preheat Oven, Prep Pan

   Preheat your oven to 350 degrees F. Give your coffin cake pan a good spray with baking spray.

   Mix Wet Ingredients

   Melt the 1/2 cup butter in a microwave-safe bowl. In a large mixing bowl, combine the melted butter and 1/2 cup sugar until smooth.

   Add the 2 eggs and 1 teaspoon vanilla extract, mixing until everything is well combined.

   Add Dry Ingredients

   Beat in the 1/3 cup dark chocolate cocoa powder until the batter is smooth. Then, gradually beat in the 1/2 cup flour, 1 pinch salt, and 1/4 teaspoon baking powder until just combined; be careful not to overmix.

   Fill Coffin Molds

   Spoon the brownie batter into the prepared coffin molds, filling each about 2/3 of the way.

   Bake Brownies

   Bake at 350 degrees F for 20 to 25 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached. (I found 22 minutes to be just right for mine.)

   Decorate Cooled Brownies

   Once the brownies have completely cooled, it's time for the fun part: decorate them with chocolate, candy pens, and sprinkles as you wish.
