Blini Pancakes
These blini are light, airy pancakes made with a blend of buckwheat and all-purpose flours, leavened with yeast. The batter gets a double rise, first as a simple mix, then again after being enriched with melted butter and an egg yolk, and finally lightened with a whipped egg white. Whisk Dry Ingredients
In a large bowl, whisk together the 1/2 cup buckwheat flour, 2/3 cup all-purpose flour, 1/2 teaspoon salt, and 1 teaspoon yeast. - 02

Make a well in the center of the dry ingredients and pour in the 1 cup warm milk, whisking until the batter is smooth and free of lumps.
