Baked Yuca Fries
Yuca fries are a starchy, slightly sweet alternative to potato fries, with a texture that gets wonderfully crisp when baked. Prep Yuca
Preheat your oven to 450°. Meanwhile, bring a large pot of water to a rolling boil.
Trim the tough ends from each yuca, then cut them in half widthwise. Stand each piece on its end and carefully use a sharp knife to slice off the waxy peel. Once peeled, cut each piece in half lengthwise, then cut it in half lengthwise one more time, aiming for 16 pieces total. Don't forget to trim out the fibrous center from each piece.
