Add the remaining 2 1/2 cups flour and beat until the dough is smooth. Cover the bowl and let it double in size, which should take about 1 hour.
Generously dust a board with flour and turn the dough out onto it. This is a soft dough, so make sure you have enough flour on the board to keep it from sticking, but it's still easy to handle. Pat the dough into a round, about 1/2" thick.
Use a 3" doughnut cutter to cut out the doughnuts and their holes. Place them on prepared baking pans, leaving about 1" between each one; they won't spread much as they rise.
