Arroz con Leche Recipe
This arroz con leche is a creamy, sweet rice pudding that cooks down slowly with cinnamon and milk. It starts by infusing water with cinnamon sticks, then cooking the rice in that fragrant liquid before adding milk, sugar, and vanilla. The key is a long, gentle simmer to achieve that thick, custardy texture. Serve it chilled, perhaps with a sprinkle of extra cinnamon, for a soothing dessert.

Simmer Cinnamon Water
In a small pot, combine the water and cinnamon sticks. Bring it to a boil, then reduce the heat and let it simmer for 10 minutes to really infuse the water with the cinnamon's aroma. Set the pot aside, then remove and discard the cinnamon sticks. - 02
Cook Rice in Cinnamon Water
Pour the cinnamon-infused water into a large saucepan and add the rice. Place the saucepan over medium heat and cook for 5 minutes, allowing the rice to absorb some of the liquid.
