   Prepare Oven and Dry Ingredients

   Preheat your oven to 180°C/fan 160°C/gas 4. In a large bowl, combine the porridge oats, desiccated coconut, plain flour, and caster sugar.

   In a small pan, melt the butter, then stir in the golden syrup. Add the bicarbonate of soda to 2 tbsp boiling water, then stir this into the warm butter and golden syrup mixture; it will foam up a bit.

   Combine Wet and Dry

   Make a well in the center of the dry ingredients. Pour in the warm butter and golden syrup mixture, then stir gently until everything is just combined and no dry streaks remain.

   Portion and Bake

   Drop dessertspoonfuls of the mixture onto buttered baking sheets, leaving about 2 1/2 cm/1 inch between each one to give them room to spread. Bake in batches for 8-10 minutes, until the biscuits are golden brown. Once baked, transfer them to a wire rack to cool completely.
