Preheat Oven, Line Tray

Get your oven going to 190 °C. While it heats, line a baking tray with parchment paper or a silicone mat.

Combine Wet Ingredients

In a medium bowl, whisk together the sunflower oil, milk, muscovado or castor sugar, and vanilla essence until the sugar is mostly dissolved.

Combine Dry Ingredients

In a separate, larger bowl, combine the flour, almonds, pistachios, salt, and bicarbonate of soda. Give it a good whisk to ensure everything is evenly distributed.

Mix Dough

Create a well in the center of the dry ingredients, then pour in the liquid mixture.

Using a wooden spoon, mix lightly until just combined. Be careful not to overmix; a few streaks of flour are fine.

Form Cookies

Scoop out about 1 teaspoon of the dough for each cookie. Roll each portion into a smooth ball between your palms.

Arrange on Tray

Arrange the dough balls on your lined baking tray, making sure they're spaced well apart. Gently flatten each ball just a touch with the palm of your hand or the back of a spoon.

Bake Cookies

Slide the tray into the center of the preheated oven.
