Pan-Fry Alternative

If you don't have an air fryer, you can pan-fry these instead. Add enough oil to a medium skillet with high walls so it comes about 1/2 inch up the side.

Heat the oil over medium-high heat until it reaches 350°F. Carefully add the egg rolls and fry for 3 to 4 minutes, then flip and fry for another 3 to 4 minutes until they're golden brown. Remove them and let them drain and cool on a few paper towels.

Cook the Filling

In a large skillet, heat the olive oil over medium heat. Add the ground pork and break it apart with a spatula or wooden spoon as it cooks. Continue cooking until the meat is cooked through, about 6 to 8 minutes.

Finish the Filling

Add the garlic, ginger, carrot, scallions, and cabbage to the skillet. Continue to cook, stirring regularly, until the cabbage wilts and softens, about another 3 to 4 minutes. Season the filling with soy sauce and rice wine vinegar, then take it off the heat to cool. You can make this filling in advance if you like.

Fill the Wrappers

Place a single egg roll wrapper on a dry surface, with one point facing you like a diamond. Spoon about 1/4 cup of the cooled filling mixture into the middle of the wrapper.

Roll the Egg Rolls

Dip your fingers in water and moisten the edges of the wrapper. Fold the bottom point over the filling, then fold in the side edges towards the center. Start rolling the egg roll away from you, forming a tight cylinder. Place it on a plate and repeat with the remaining filling; you should get at least 12 egg rolls.

Load the Air Fryer

Arrange the egg rolls in the basket of your air fryer, making sure they don't touch or stack so air can circulate. Lightly spray or brush them with oil.

Air Fry Until Golden

Place the basket in the air fryer and set the temperature to 350°F. Cook for 6 to 7 minutes, then flip the egg rolls, spray or brush the bottom side with oil again, and cook for another 4 to 5 minutes.

Serve

Once finished, the egg rolls should be golden brown and crisp. Serve them immediately.
