What is Chilli Con Carne?

This recipe, which is several hundred years old, primarily includes chilli and meat – “con carne” translates to “with meat.” The key is the spiciness, achieved with chilli peppers, chilli powder, or a combination of both.

Fresh peppers like jalapeños work well, but you can use any type you prefer.

Chilli con carne can be made either with ground beef or whole cuts of meat like brisket. Whole cuts require longer cooking until they can be easily shredded with a fork. I generally prefer ground beef for a quicker and simpler recipe.

Recipe Preparation Steps

Preparation:

Remove the meat from the refrigerator at least 20 minutes before cooking. Dice the onion and bell pepper.

Cooking the Meat:

Heat olive oil in a pot or casserole and add the ground beef. Season with salt and pepper. Cook over high heat until the meat is browned. This may take up to 10 minutes. Break up the meat with a spoon while cooking.

Adding Vegetables:

Once the beef has released most of its juices, move it to one side of the pot. Add a bit more oil to the empty side and sauté the onion for about 2 minutes. Add minced garlic, tomato paste, and ketchup. Season with oregano, paprika, cumin, and cinnamon if using. Mix well.

Adding Spices and Tomatoes:

Add diced chili peppers and canned tomatoes. Stir well and pour in the beef stock. Reduce heat and let it simmer for about 30 minutes.

Adding Vegetables:

After 30 minutes, add the diced red bell pepper, cover, and continue to simmer.

Final Steps:

About 20 minutes before the end of cooking, add beans and corn. Adjust seasoning with salt and pepper if needed. Stir in the dark chocolate and mix well.

Serving:

Garnish with fresh coriander and serve with sour cream. Enjoy with rice or crusty bread.
