Whether it’s cold outside or you’re feeling down, there are many reasons to make this fantastic soup. Especially during colder days, my partner and I love to make this “vitamin bomb.”
Most of the ingredients are probably already available:
- Onions and garlic are likely sitting in your pantry.
- Carrots might be in your fridge.
- Oil or butter is a staple.
- Frozen peas are often found in the freezer. You can also use canned peas, corn, and beans.
- Salt and various spices are probably in your cupboard.
- Bouillon, which you can use instead of homemade stock, is also a common pantry item.
- Sweet potatoes: you’ll likely need to buy these from the store.
Sweet potatoes make this soup incredibly tasty and interesting. Their pleasant sweetness pairs wonderfully with fennel and the other vegetables. Since sweet potatoes are quite large, two should be enough.
I use about half a kilogram (1 lb).
Since this is a quick vegetable soup, you can also use canned beans. White beans (e.g., cannellini) work well.
How to Make Vegetable Soup
The best part is that the recipe is very simple and quick. First, prepare and clean all the necessary vegetables. The cooking itself takes less than half an hour.
In a pot, heat olive oil or butter and add finely chopped onion and garlic. Then add carrots and spices. I had some celery stalks left from a lasagna recipe, so I used those as well.
Mix everything well and let it cook for a few minutes. Then add diced sweet potatoes and pour in vegetable broth.
If you don’t mind whether your fantastic vegetable soup is vegetarian or vegan, you can use chicken bouillon.
Let it cook until the sweet potatoes and carrots are tender, which should take about 20 minutes. Then add the remaining vegetables: peas, corn, and beans.
Use the Vegetables You Like
This easy vegetable soup is also great because you can use any vegetables you like. If you’re in the mood for kohlrabi, add it to the soup! If you don’t like corn or beans, feel free to leave them out.
Instead of parsley, you can use fresh dill.
Simple vegetable soup is truly versatile, and it’s up to you what you add to it. What matters is what you have available or what vegetables are in season.
However, I highly recommend sweet potatoes as they make this recipe unique and very interesting.
